DELICIOUS CHICKEN SALAD AVOCADO BOATS

Summer can be HOT. Between the concrete sidewalks reaching temperatures high enough to cook an egg and your single window AC unit that has been installed in the apartment longer than you’ve lived there, it’s a good idea to stay as cool as you can in order to get through August (and maybe September!). Salads and smoothies sound super refreshing, but what about some cool and refreshing recipes that are packed with protein and DON’T require the heat of your oven or stove?

These avocado boats make awesome alternatives to sandwiches and wraps. Whether you are looking for a grain-free way to enjoy chicken salad, egg salad, tuna salad (and more!) or just trying to switch up your routine, try one of these cute and creamy carriers for all things delicious!


avo boat 2Creamy Buffalo Chicken Salad

Ingredients:

1 ½ cups cooked, shredded chicken

½ cup shredded carrots

½ cup diced celery

¼ cup diced onion

¼ cup chopped almonds

½ cup paleo mayonnaise (link)

¼ cup hot sauce, like Frank’s Red Hot

¼ teaspoon smoked paprika

S+P to taste

2 avocados, halved

Directions

In a large mixing bowl, combine chicken, carrots, celery, onion, and almonds. In a small bowl, whisk together mayonnaise, hot sauce, paprika, and S+P. Stir dressing into chicken mixture until thoroughly coated. Use a spoon to hollow out part of each avocado half, and reserve avocado flesh for another use (guacamole, chopped on top of eggs, eaten straight topped with S+P). Divide chicken salad mixture among avocado cups and serve on a plate with either a spoon or fork!

Light Spring Chicken Salad

Ingredients:

1 ½ cups cooked, shredded chicken

½ cup chopped granny smith apple

¼ cup dried cranberries

¼ cup chopped pecans

⅓ cup olive oil

3 tablespoons balsamic vinegar

S+P to taste

2 avocados, halved

Directions

In a large mixing bowl, combine chicken, carrots, celery, onion, and almonds. In a small bowl, whisk together olive oil, balsamic vinegar, and S+P. Stir dressing into chicken mixture until thoroughly coated. Use a spoon to hollow out part of each avocado half, and reserve avocado flesh for another use (once again anything you like, get creative). Divide chicken salad mixture among avocado cups and serve on a plate with either a spoon or fork!
